Mediterranean Stuffed Chicken
Hard not to love a stuffed chicken breast!

1 lb (4) chicken breasts
1 package (8 oz) sun-dried tomatoes
2 tbsp pesto
1/2 cup feta cheese, crumbled
1/4 tsp Himalayan salt
1/2 tsp ground pepper
Preheat the oven to 350F.
Using a sharp knife, carefully butterfly each chicken breast making sure to stop about 1/2 inch from the edge.
Divide the pesto, tomatoes and feta cheese among the 4 butterflied chicken breasts and close. If necessary, use toothpicks to hold the chicken breasts closed.
Place chicken breasts in a large backing dish and sprinkle with S&P.
Bake for about 30-40 minutes or until the internal temperature reaches 165F. Serve with a bed of fresh greens, vegetables, or cauliflower rice!
