Mediterranean Stuffed Chicken

Hard not to love a stuffed chicken breast!

Serves: 4


  • 1 lb (4) chicken breasts

  • 1 package (8 oz) sun-dried tomatoes

  • 2 tbsp pesto

  • 1/2 cup feta cheese, crumbled

  • 1/4 tsp Himalayan salt

  • 1/2 tsp ground pepper


  1. Preheat the oven to 350F.

  2. Using a sharp knife, carefully butterfly each chicken breast making sure to stop about 1/2 inch from the edge.

  3. Divide the pesto, tomatoes and feta cheese among the 4 butterflied chicken breasts and close. If necessary, use toothpicks to hold the chicken breasts closed.

  4. Place chicken breasts in a large backing dish and sprinkle with S&P.

  5. Bake for about 30-40 minutes or until the internal temperature reaches 165F. Serve with a bed of fresh greens, vegetables, or cauliflower rice!
