Grilled Chicken Breast with Roasted Vegetables Pan Sheet

Ingredients:


  • 1 (4 - 5 oz) chicken breast

  • 1/2 cup cubed butternut squash

  • 5 Brussel sprouts

  • 1/4 red onion

  • 6 little potatoes

  • 1/2 tsp olive oil

Seasoning for chicken:

  • 1 tbsp olive oil

  • 1/2 tbsp Italian spice

  • 1/4 lemon - juiced

  • Himalayan sea salt & pepper

  • 1/2 tsp garlic powder



Directions:


  1. Heat the oven to 350F. Line a baking sheet with parchment paper or foil.

  2. Combine the ingredients for the seasoning and spread over the chicken.

  3. Toss the vegetables in the olive oil and season with S&P.

  4. Spread the vegetables and the chicken breast(s) out on the pan and bake for 30 minutes or until the chicken is cooked through.
