Nutrition (per serving):
Total Fat: 15g
1 tsp olive oil
1/4 cup onion, chopped
1/4 cup mushrooms
1/2 red pepper, chopped
1/2 cup spinach
1 tbsp low fat shredded cheese
1 whole wheat tortilla
Heat a skillet over medium heat and add the olive oil.
Add the onion, mushrooms and red pepper with a sprinkle of salt and pepper and sauté about 5 minutes (until cooked).
Scramble the eggs in a small bowl. Reduce heat to medium low and add in the eggs. Scramble the eggs together with the veggie mixture. Add in the spinach and cheese and cook for another 2 minutes.
Remove from heat and place the mixture in the middle of the tortilla. Fold in the ends and roll up.
