Nutrition (per serving):

1/2 scoop vanilla protein powder
2 1/2 cups old fashioned rolled oats
1 tbsp coconut oil, melted
1 medium banana, mashed
1/4 cup maple syrup
1/2 cup unsweetened almond milk
1 1/2 cup frozen mixed berries
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp Himalayan salt
Preheat the oven to 350F. Fill a muffin tray with liners or coat with a non-stick cooking spray.
In a mixing bowl combine the wet ingredients: banana, eggs, maple syrup, coconut oil and almond milk. Mix until well combined.
Fold in the mixed berries. Spoon batter into the muffin tin.
Bake for 18 minutes or until a toothpick comes out clean.
Let muffins cool before eating and storing.
