Berry Muffins

Ingredients:


  • 1/2 scoop vanilla protein powder

  • 2 1/2 cups old fashioned rolled oats

  • 1 tbsp coconut oil, melted

  • 2 eggs

  • 1 medium banana, mashed

  • 1/4 cup maple syrup

  • 1/2 cup unsweetened almond milk

  • 1 1/2 cup frozen mixed berries

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/4 tsp Himalayan salt



Directions:


  1. Preheat the oven to 350F. Fill a muffin tray with liners or coat with a non-stick cooking spray.

  2. In a mixing bowl combine the wet ingredients: banana, eggs, maple syrup, coconut oil and almond milk. Mix until well combined.

  3. Fold in the mixed berries. Spoon batter into the muffin tin.

  4. Bake for 18 minutes or until a toothpick comes out clean.

  5. Let muffins cool before eating and storing.
