Mediterranean Bowl

A nice vegetarian option that still provides a good source of protein.

  • 1/4 cup brown rice or quinoa

  • 2 cups mixed greens

  • ½ tomato, chopped

  • 1 mini cucumber sliced

  • 1 tbsp light feta cheese

  • 6 kalamata olives

  • Red onion, sliced

  • 2 tbsp hummus


  1. In a small pot, bring 1/2 a cup of water to boil with 1/4 cup of quinoa or rice. Once the water boils, turn down heat to simmer and cover about 15 minutes. Fluff with fork.

  2. Lay the greens in a bowl. Top with quinoa or rice, vegetables, chickpeas, feta and hummus.
