Chicken Quesadilla

  • 1/2 cup cooked chicken breast, shredded or chopped

  • 1/8 cup onion, chopped

  • 1/2 tomato, seeded & chopped

  • 1/4 cup shredded jack pepper cheese

  • 1/2 tbsp chopped fresh cilantro

  • 1/2 tbsp lime juice

  • 1 whole wheat tortilla

  • 1/8 tsp ground cumin

  • pinch of Himalayan salt


  1. Preheat the oven to 425F or use a panini grill.

  2. Combine tomato, onion, cilantro, lime juice, cumin and salt in a small bowl and set aside.

  3. Lightly coat one side of the tortilla with a non-stick cooking spray. Place sprayed side down on a baking sheet. Top with chicken and cheese (on half) of the tortilla and fold.

  4. Bake 10 minutes or until golden brown. Cut into wedges.

  5. Serve with the salsa mixture.
